Summer Berry Eton Mess

Summer Berry Eton Mess
Ingredients:
- 500g mixed berries (strawberries, raspberries and blackberries)
- 1 tsp vanilla bean paste
- 1 small splash of balsamic vinegar
- 1 tsp of caster sugar
- 150ml thick cream
- 150ml creme fraiche (or Greek yoghurt)
- 1 TB icing sugar
- 30g Moreish Menu Meringue Bites, crumbled
Method:
Halve or quarter any large strawberries, then place all the mixed berries in a bowl. Add 1 teaspoon of caster sugar, the vanilla bean paste and balsamic, stir well, then leave aside to macerate.
Lightly whisk thick cream, crème fraîche and icing sugar together in a separate large bowl until soft peaks form.
Place three quarters of the berries in a mixing bowl with the whisked cream mixture and most of the meringue bites. Gently fold together.
Spoon into four glasses and top with the remaining berries and leftover meringue. Serve immediately.
