Peanut Butter & Choc Chip Cookies

These Peanut Butter & Choc Chip (or chunks as we prefer) Cookies really are the answer for your sweet & savoury cravings. Peanut Butter & Chocolate really does make the perfect combo, especially with a touch of sea salt to finish it off (excuse the drool).
This simple one bowl cookie dough mix is foolproof and fast....which is perfect when your cravings creep up on you quickly. The only tricky part is trying to stop at eating one....good luck!
Peanut Butter & Choc Chip Cookies
Ingredients:
- ½ cup butter
- ½ cup Ridiculously Delicious smooth peanut butter*
- 1 cup (200g) brown sugar
- 1 ¼ cups plain flour
- 1 tsp bicarbonate of soda
- 1 tsp vanilla extract
- 1 free range egg, lightly beaten
- 1 1/2 cup dark choc chunks (roughly chopped chunks from a good quality block of chocolate)
Method:
Preheat oven to 180°C. Lightly grease two baking trays and line with non-stick baking paper. Using an electric mixer, cream the butter & sugar until light and fluffy. Add the egg until just combined, then add the peanut butter and vanilla extract. Mix well.
Gently mix through the flour and bicarbonate of soda using a spatula or wooden spoon. (Add a pinch of sea salt here if the peanut butter is unsalted.) Add the chocolate pieces, mix until evenly distributed.
Using a tablespoon, scoop out the cookie dough and roll into balls. Place onto the prepared trays approx 8cm apart. Bake for 10-12 minutes or until light golden.
Leave on the trays for 2 mins before removing to a wire rack to cool completely.
Place into an airtight container.
