Homemade Herb Salts - a pinch of natural goodness

Herb salts or what I like to call supercharged seasonings, can easily become a staple in your kitchen just as they are in ours. Yes you can buy gourmet pre-made ones from your local deli, but as they are so simple to make, you can create an entire range for yourself and save some dollars along the way. Making herb salts at home gives you the freedom to create your very own favourite blend or the opportunity to play around with new flavour combos. Herb Salt "What do I use them with?" I hear you ask. Well here are a few ideas.... When to use Orange & Rosemary Salt:
  • Season a whole chicken or leg of lamb roast
  • Sprinkle over a piping hot bowl of pumpkin soup
  • Use to make Focaccia bread
  • Season simple steamed green vegetables like broccolini with a dab of butter & pinch of this salt blend
When to use Italian Herb Salt:
  • Sprinkled over avocado on toast
  • With Spaghetti Aglio E Olio (Spaghetti with garlic & olive oil)
  • Italian Herb Salt Butter - Mix it with softened unsalted butter, roll into a thin cylinder and cut into mini discs. Refrigerate & use when required
  • Season fillet steaks
Just use your imagination! Orange & Rosemary Salt
  • Sea Salt 1/3 cup
  • Orange 1 zested
  • Fresh Rosemary Leaves 1/4 cup finely chopped
Mix all ingredients together in a small bowl. As the mixture will be slightly wet you'll need to dry it out. Spread salt mix on a baking tray lined with baking paper and either leave out overnight to dry or place in a low oven (100 degrees celsius) for approx 1 hour.   • Sea Salt 1/3 cup
  • Fresh Rosemary, Parsley, Thyme Leaves 1/3 cup finely chopped
  • Dried Chilli Flakes 1/2 tsp
Mix all ingredients together in a small bowl. As the mixture will be slightly wet you'll need to dry it out. Spread salt mix on a baking tray lined with baking paper and either leave out overnight to dry or place in a low oven (100 degrees celsius) for approx 1 hour.
