Chilli & Coriander Prawn Tacos

It's Taco Tuesday! But let's be honest, these delicious tacos can be enjoyed any day of the week.

Chilli & Coriander Prawn Tacos


Ingredients:

  • 500g medium raw prawns peeled and deveined

  • 2 TB Homegrown Sauce Co Chilean Aji + extra for serving

  • 1 large corn on the cob, kernels removed

  • 1 small red onion, halved, thinly sliced

  • 1 just-ripe avocado, stoned, peeled, sliced

  • 250g punnet cherry or roma tomatoes, halved

  • 1/2 cup roughly chopped coriander

  • 2 TB lime juice

  • 1 T olive oil

  • 1/2 cup sour cream

  • 1 teaspoon smoked paprika

  • 1 teaspoon lime juice

  • 12 regular flour tortillas

       

      Method:

      1. Mix the Homegrown Sauce Co Chilean Aji and prawns together in a bowl. Set aside for just 5-20 mins, no longer. 

      2. Gently combine the avocado, coriander, tomatoes, red onion, 2 TB of lime juice and 1 TB olive oil in a large serving bowl. Season and set aside.

      3. Combine sour cream, paprika and 1 tsp lime juice in a small serving bowl. Season and set aside.

      4. Heat a large frying pan over high heat. Cook the prawns, turning, for 5 mins or until prawns change colour and curl. Add the corn kernels in for the last minute so they char slightly. Stir to combine. 

      5. Meanwhile, heat the tortillas following packet directions.

      6. Divide tortillas among serving plates. Place the avocado & coriander mixture, pink sour cream sauce and extra Chilean Aji on the table ready for serving. As soon as the sizzling prawns are cooked, place these in the centre of the table. Have fun assembling your tacos!
